Storage
Brinjals are not good to store for a long time. Therefore, consume within a few days and store in a cool place, away from direct sunlight. Internal white meat quickly turns brown once cut, so use it as soon as you cut it or refrigerate by placing the rest in a bowl or plate, but avoid sealing as it increases decomposition.
Brinjals are a prominent part of dry curry and gravy from India. It is also used in lentil soups, stews, and rice. It can be roasted, broiled, baked, and sauteed.
